Ma vinaigrerie a \u00e9t\u00e9 fond\u00e9e en 1950 par mon p\u00e8re, perp\u00e9tuant ainsi<\/p>\n

une ancienne tradition locale \u00e0 Mod\u00e8ne : la production de vinaigre balsamique.<\/p>\n

Au fil du temps, j’ai agrandi l’usine jusqu’\u00e0 ce qu’elle compte aujourd’hui plus de 600
\nbarils d\u00e9di\u00e9s \u00e0 la production. J’ai toujours veill\u00e9 \u00e0 maintenir une approche rigoureuse
\net respectueuse de la tradition de production.<\/p>\n

Mon entreprise, en effet, est toujours rest\u00e9e artisanale\u2026 Nous ne nous sommes jamais transform\u00e9s
\nen une industrie, m\u00eame si aujourd’hui 99,9 % des vinaigres balsamiques sont
\nproduits industriellement.<\/p>\n

Il n’y a pas de po\u00e9sie dans ce que je fais, seulement de la constance et la conscience que mes enfants sont
\nles premiers consommateurs de mon produit, et je souhaite qu’ils consomment un bon, et surtout sain,
\nvinaigre balsamique.<\/p>\n

Production artisanale authentique<\/p>\n

Chaque goutte de notre vinaigre balsamique provient des raisins Lambrusco et Trebbiano de Mod\u00e8ne,<\/p>\n

cuits lentement selon la tradition. Nous n’ajoutons ni caramel, ni \u00e9paississants, ni colorants\u00a0:<\/p>\n

la saveur provient uniquement du temps et du bois. Il en r\u00e9sulte un condiment
\nnaturel, \u00e9quilibr\u00e9 et harmonieux qui exprime la v\u00e9ritable essence du terroir
